Basic Pizza Dough

for two

 

200mls very warm water
1 tsp dried yeast
1/2 teaspoon of salt
1/4 tsp sugar
1/4 cup olive oil (plus extra for oiling)
2 cups (250g) plain flour  (plus extra for dusting)
2 x 32cm pizza pan (lightly oiled)

 


Combine 200mls warm water, 1 tsp of yeast, 1/2 tsp of salt and 1/4 tsp of sugar in a large bowl. Stir briefly to combine. Set aside to rest for 5 minutes (bubbles should start to appear).


Add 1/4  cup of olive oil to the yeast mixture, then sift in 2 cups of plain flour using a fork to gently combine. Once the dough has come together, lightly dust your hands and a clean flat surface with a little flour. Turn the dough mix out onto your dusted surface and continue to knead for approximately 5-10 minutes. If you find your dough is too wet or sticking to your hands just dust with a little more flour and continue to knead until the dough is smooth and elastic. Shape the dough into a ball and place it into a large clean bowl. Gently coat the dough ball with a small amount of olive oil to lightly cover.


Cover the bowl with plastic wrap and let it sit in a warm place for 45 minutes to 1 hour or until the dough has almost doubled in size. If you are cooking on a cool day preheat your oven to 40ºC (extremely low) then turn the oven off. Sit the dough in the warm oven and allow it to rise for 45 minutes to 1 hour or until the dough has almost doubled in size.

 

While the dough is rising prepare your pizza topping.

To cook the pizzas: Preheat the oven to 215ºC (205ºC fan-forced).


Brush two 32cm pizza pans lightly with oil and set aside. Turn the risen dough out onto a lightly floured surface. Divide the dough into two equal parts. With a dusted rolling pin, roll each half out thinly and transfer onto your pizza pans.


Top each pizza with your topping recipe of choice and bake for approximately 20 minutes or until the crust is crisp and golden.
